8 cups loosely-packed seeded watermelon chunks
1/4 cup packed fresh mint leaves
12 ounces sparkling water
Mint sprigs (for garnish)
* Also great using mangos or blood oranges instead of watermelon.
To process easily, divide the watermelon into 2-cup portions. Add the mint leaves to one portion.
Using a blender, puree each portion of the watermelon returning the puree to a large pitcher.
Once all four batches of puree have been added, stir in the sparkling water.
Depending on the sweetness of the watermelon, sugar may be needed to sweeten the drink. Just add one tablespoon of sugar at a time, stirring well until you reach the desired sweetness.
Chill for 1 hour. Serve over ice with a mint sprig for garnish.
