English Peas with Mushrooms
10 ounce package of frozen green peas
4 ounces of mushroom stems & pieces
1 small onion, chopped
½ cup celery, chopped
2 ounces of pimentos, drained & chopped
4 Tablespoons of unsalted butter
½ teaspoon of salt
1/8 teaspoon of black pepper
Empty the frozen peas into a sauce pan. Use the liquid from the mushrooms to replace the required water. Otherwise, prepare as directed on the package. Drain and set aside.
Melt the butter in a small skillet, add the onions and celery and sauté these until soft. Add the mushrooms, pimento, salt and pepper and stir to blend. Add peas and heat thoroughly. Serve warm.
