Avocado Vegetable Dip


2 large avocados
1 carrot
2 green onions
1/2 cup fresh broccoli
1/2 cup fresh cauliflower
1/2 cup celery
1/2 cup zucchini
2 tbsp. lemon juice
1 (6 oz. pkg.) dry Italian salad dressing mix


Peel, pit and mash the avocados. Finely chop the remaining vegetables. Place all of this in a bowl.

In a separate bowl, stir together the lemon juice and dry dressing mix. Add the sour cream and blend well. If you like your dip a little thinner, add some milk, one tablespoon at a time, until you reach the desired consistency.

Pour over veggies and fold to coat evenly. Cover and place in the refrigerator for 3 hours or overnight.

Serve with carrot & celery sticks, zucchini slices and broccoli and cauliflower florets.
